Through the adoption of long crop rotations by alternating crops annually, the soil is able to regenerate, maintaining its long-term capacity to provide nourishment. With the use of green fertilizers, the soil remains free from chemical treatments. By leveraging cutting-edge technology and traditional farming wisdom, Alliance Bio is setting a new standard for agricultural excellence that prioritizes both productivity and ecological stewardship.

All flours at Alliance Bio are ground and packaged promptly to preserve their quality for a longer duration. Alliance Bio’s granite millstones, meticulously carved from a single block in the quarries of the Sidobre Massif (Tarn), operate at approximately 120 revolutions per minute. The grain, placed at the center, is evenly unrolled and travels the entire length of the 100 cm diameter millstone, while maintaining a temperature below 30 °C. During the rotation of the millstone, all components of the grain are crushed and blended, mimicking the traditional methods of ancestral flour production. This results in a grind that retains the vitamins, minerals, fibers, and natural aroma of the wheat.

Organic rye flour adds a typical flavor to your preparations, which is more pronounced than that of wheat, featuring a slight acidity accompanied by a hint of sweetness. Its gray color indicates a wealth of fiber, vitamins, and essential minerals. Additionally, rye flour has a lower gluten content. It should be paired with another wheat flour to create yeast breads. Rye bread, darker and denser, offers significant nutritional benefits and pairs beautifully with salted butter, cheeses, and seafood platters.

Produced through traditional stone milling, the whole grain—comprising the kernel, bran, and germ—is gently ground under low pressure, ensuring that the nutritional benefits of rye are preserved. This method prevents heating or oxidation of the grain.
