Chickpeas mainly come in two varieties: Kabuli and Desi.
Kabuli types feature larger seeds with thin, beige seed coats. Kabuli chickpeas offer a milder, slightly nutty flavor and a smoother texture. These are the ones you’ll most commonly find in supermarkets.
Desi types are characterized by their smaller, angular seeds with thick, dark-colored seed coats. Desi chickpeas have a firmer texture with a nutty and slightly denser flavor.

Primeal Desi Chickpeas, with their black husk removed, can be cooked in just 15 to 20 minutes. They are versatile and can be incorporated into a wide range of dishes: from creamy preparations such as Indian dhal to tender additions in salads.
