Chickpeas are widely recognized for their numerous health benefits.  They boast excellent nutritional quality, rich in protein and easily digestible carbohydrates.  Additionally, they are packed with unsaturated fatty acids, essential minerals, vitamins, and a generous amount of dietary fiber.

- Suggested cooking method: Soak 8 to 12 hours. Rinse and cook 1 volume of chickpeas in 3 volumes of water for 60 minutes.
- Cooking Tips:
* For those in a hurry, your chickpeas can be ready in less than 30 minutes in the pressure cooker.
* Always add salt at the end of cooking to avoid hardening their shell and extending their cooking time.
* A pinch of baking soda makes them more digestible and shortens their cooking time.
* An aromatic herb broth based on thyme, oregano or savory, bay leaf, etc. facilitates the digestion of dried legumes and adds a pleasant flavor to your preparations.
