Through the adoption of long crop rotations by alternating crops annually, the soil is able to regenerate, maintaining its long-term capacity to provide nourishment. With the use of green fertilizers, the soil remains free from chemical treatments. All flours at Alliance Bio are ground and packaged promptly to preserve their quality for a longer duration. Alliance Bio’s granite millstones, meticulously carved from a single block in the quarries of the Sidobre Massif (Tarn), operate at approximately 120 revolutions per minute. The grain, placed at the center, is evenly unrolled and travels the entire length of the 100 cm diameter millstone, while maintaining a temperature below 30 °C. This "unrolling" process prevents the flour from being heated or oxidized, thereby preserving the gluten-starch bonds. During the rotation of the millstone, all components of the grain are crushed and blended, mimicking the traditional methods of ancestral flour production. This results in a grind that retains the vitamins, minerals, fibers, and natural aroma of the wheat.
Einkorn is the oldest grain grown and consumed by humans that has preserved its original form. Einkorn has therefore retained its high nutritional content and its authentic taste.
Alliance Bio’s 100% organic einkorn flour is valued for its mild yet distinctive flavor and impressive nutritional profile. Produced through traditional stone milling, the whole grain—comprising the kernel, bran, and germ—is gently ground under low pressure, ensuring that the nutritional benefits of einkorn are preserved.
